Gooseberry Patch's Pork Chop Casserole

It tastes (and smells!) like a delicious Sunday dinner - in casserole form! YUM!

  • 4 pork chops
  • pepper to taste
  • 4 Tbs orange marmalade
  • 6-oz package stuffing mix, cooked
  • 15-1/4 oz can corn, drained
  • 4 c. instant mashed potatoes, cooked
  • 1/2 stick butter, sliced

Place pork chops in a 9x13" baking dish dish coated with non-stick vegetable spray. Season with pepper and add marmalade. Spread stuffing over pork chops; top with corn. Spoon mashed potatoes over all; dot with butter. Bake, uncovered, at 375* for 25 minutes. Cover with foil and bake an additional 20 minutes. Makes 4 servings.

*Boneless chicken breasts can be substituted for pork.*
